I was offered a wonderful position and had the option to start on the 17th or the 1st of December. I decided to go ahead and start Nov 17th, thinking I could at least get more down before the holidays (than starting on the first). I have one week of orientation and then three work days before Thanksgiving.
Any advice for starting during this time, or proceed as normal. (Fit in. Fit in. Fit in.)

Best time to start ... join in the fun while it is there
This sounds like the best time to start.
There will be a bit lower pressure in those first two-three weeks. And some time off.
Then you will be exposed to all of those Holiday parties and informal get togethers around the cookie tin in the break room.
People usually get a little bit of a pass on results for the first few weeks, and (depending on the environment) people have lower results around the holidays, too. I'd suggest you use that built-in slack to focus on relationships.
1 - I'd recommend that you join in and bring in whatever holiday appropriate food or decorations are good for you and similar to what others around the office are doing. Don't over do it.
* Homemade Cookies. * A simple decoration for your desk.
2 - And consider helping with whatever set-up and decorating there might be.
There is usually someone in every office that likes decorating and setting up for the parties.
Help that person... usually a High I and/or a High S .. they will introduce you to everybody they know.
And appreciate the help.
Make sure you listen to the Handshake Podcast and the Small Talk Podcast (I forgot what that one was called) .

You got it. Fit in, learn the culture and the organization. The timing may work to your advantage. Depending on when your fiscal year ends, things are often a little slower around the holidays. Some organizations also have employee potlucks or lunches which allow you to introduce yourself to more diverse groups of the company. The slower pace may give you more leeway to meet with people, find out about their roles, and how you fit into that in the company. I also find it tends to be more casual which may make people more open.
Otherwise, proceed as normal. Congratulations, and good luck.
