In the not so distant future, the company I work for will likely be acquired. After the close of the acquisition, how do I reflect this on my resume? First scenario:
Current role: In the very short term after the acquisition I do not expect my job duties to change. (After that…who knows? But that’s not really germaine to my question.) Currently says something like:
August 2008 to Present: Sr. Bottlewasher, OldComapany …should it change to…
August 2008 to Present: Sr. Bottlewasher, NewCompany (formerly OldCompany) or something different?
Second Scenario:
Past role in current company:
Currently says something like…
August 2007 to August 2008: Jr. Bottlewasher, OldCompany. Should it stay as is, even though the old company will no longer exist or something different?

Jazz, the second scenario is inaccurate. The first scenario is also (less) inaccurate. If the acquisition goes ahead, you work for a different company at the time of acquisition. Your resume needs to reflect this. If you have space, perhaps you could add after the new company name “acquired old company 2009”.

I think both are accurate representations of what happens, and I see no problems. You could change your "(formerly...)" to "(acquired ... in 2009)" as Chris suggests.
You can't change the past...
Your resume must have the name of the company as it was when you left that position. So assuming the company is acquired sometime in September 2009.....
August 2008 - December 2009: Sr. Bottlewasher New Company
August 2007 - August 2008: Jr. Bottlewasher Old Company
The 'New Company (acquired Old Company) can be a useful construct, if you are concerned that the companies are not well known.
However, in general, people worry far too much about acquisitions, mergers and companies disappearing, which are a fact of corporate life. As a recruiter, I would be remiss if I didn't know every single competitor of my client company, and every local company where I might find similar skills. Part of my job is to have a really good understanding of the market - and that means knowing about Old Company and New Company, so even if you are not specific, I know the circumstances.
