The question was posed to me in an interview in a very vague manner, ie "How would I approach this {new project}", without referring to the project itself. I know this is designed to pull together some of the information about myself and my leadership style but I wanted to know what others may think about approaching this question.

You're on the right track
I'd think it's similar to the leadership style question; if you called it your "project management style" question, and used the structure of the leadership question response, that would make for a very strong way of handling the question.
